Sandrine took up her post in March 2021, following the departure of Stéphanie who is embarking on a personal project. A former assistant manager in a hotel in Lorient, she is now the manager.
At the helm of the hotel-restaurant, Sandrine is eager to see the establishment come alive. She is proud to be taking over this beautiful and historic establishment in Vannes, with a strong team!
Her interests: table tennis, fishing, music and writing.
In June 2015, Frédéric became second-in-command and then moved up to the position of chef in 2016. Since then, he has never ceased to delight your taste buds with his traditional and modern proposals. Never short of ideas, he spends his time imagining and cooking good dishes whether in the restaurant or for his family and friends!
He has been boxing for 20 years and is a fan of his French bulldog, which he takes everywhere with him.
Working alongside Frédéric since 2015, he assists him to perfection. Their flawless duo allows them to offer you the best in terms of taste and appearance. Guillaume is also a sportsman, passionate about running, trail running and mountain biking, he never stops!
In the team since October 2016, she started as a trainee and is now a room manager. She makes sure that everything is perfect before your arrival and during your meal. Always present to give you advice and information about the products served in the restaurant, she loves to see loyal customers come back and chat with them.
Her interests include photography, cooking and decorating!
Yoann joined the team in January 2020. He is the one you will find in the dining room and will serve you. He always has a smile on his face and pays particular attention to the well-being of his customers.
